Burritos and Mojitos

Difficulty: Easy-Medium

Serves Two

Spicy, mock chicken burritos join forces with the lime infused, minty fresh mojitos to blast you out of your mid-week blues!  Not only do they work in perfect harmony, they also sort of rhyme which is pretty dope.

Mojitos

Ingredients

  • Handful of mint, finely chopped
  • 2 limes (one for juice, one for a garnish)
  • 4 teaspoons of caster sugar
  • 4 shots of white rum (like Bacardi)
  • Ice
  • Soda water

Method

  1. Cut the garnishing lime into slices, cut a slit in two of the slices and run it around the rim of the glass. Dip the rim in caster sugar.
  2. Evenly distribute the mint, lime juice and caster sugar. Muddle this in the bottom of each glass until the sugar starts to dissolve into the juice.
  3. Add the ice and rum, top up with soda water.
  4. Slip a lime slice on the rim of each glass and serve immediately.

Burritos

Ingredients

  • One burrito kit (including burritos, sauce and seasoning)
  • Half a packet of mock chicken pieces, defrosted and chopped into smaller pieces
  • 1/2 red onion, finely chopped
  • 1/2 a lettuce, finely chopped
  • 2 tomatoes, finely chopped
  • 2 tablespoons of Tofutti Sour Supreme
  • 1/4 block of Cheezly, grated

Method

  1. In a frypan, heat chicken chunks and onion until brown.
  2. Add half of the seasoning and mix through (sometimes the packet will tell you to add water but I find using it dry is more effective).
  3. Heat the burritos in the microwave according to instructions.
  4. Combine lettuce, tomato, chicken mixture and burrito sauce in the centre of the burrito and wrap. Continue this process for six burritos.
  5. Top with Sour Supreme and Cheezly.
  6. Serve hot.

    Now we are talkin’! I would add some chilli to give it a little more kick but if you don’t like chilli than the amount of kick it already has is probably fine. More chilli= more kick.

    Where do you buy your Tofutti Sour Supreme? Nowhere I look seems to have it U_U
