Makes about 10 burgers

What can you do with a near bare pantry when it’s dinner time? Make Mystery Burgers! Luckily I had enough in my pantry and some salad items, all I needed to do was grab some bread rolls and I was good to go. The main ingredient is nutmeat, but whatever else you add is entirely up to you. Nobody will know or care about what’s in it when they taste it!

Ingredients

  • 1 can nutmeat
  • 1 can cannellini beans
  • 1 onion, finely chopped
  • 1 teaspoon minced garlic
  • 1 tablespoon dried basil
  • 2 tablespoons vegan Worcestershire sauce
  • 1/2 cup breadcrumbs (plus extra for coating)
  • Salt and pepper to taste

Method

  1. Add all ingredients to a large bowl and use a potato masher to ensure everything is well combined.
  2. Roll mixture into balls and coat in the additional breadcrumbs.
  3. In a thin layer of oil, fry the burgers, pressing down gently. Flip and do the same on the other side.
  4. Serve on a fresh bread roll with salads of your choice, with a side of thinly sliced baked potato.
  5. One quick and easy dinner is ready to enjoy!

I’m going to try these tonight and if I can make them so that they’re as gorgeous as the ones pictured, I’ll make them for friends over the weekend – show them what vegans are made of!
