Popcorn Chicken with Creamy Herbecue Sauce

Serves 10 as a snack or 4 as a meal

Now, as a vegan there are two professions I despise; clowns and colonels. Admittedly, I still watch fast food ads and drool over a burger or piece of chicken but I love getting in the kitchen and satisfying those cravings vegan style! Recently I’ve been craving some KFC (Kruelty Free Cuisine) so I thought I’d take a stab at some Popcorn Chicken. I wanted to take a break from deep frying, so the fact that these are baked is just another reason to give them a try! Served with my Creamy Herbecue Sauce, this makes the perfect party snack or as a meal with some oven baked potato fries.

Ingredients

  • 1 1/4 cups soy milk
  • 1 1/2 teaspoons apple cider vinegar
  • 1/4 cup plain flour
  • 1 tablespoon mixed herbs
  • 1 teaspoon garlic powder
  • 1 teaspoon salt
  • 1 teaspoon pepper
  • 3 cups mock chicken chunks, thawed
  • 2 cups bread crumbs

Method

  1. Preheat oven to 240°C and line an oven tray with baking paper.
  2. In a small bowl, whisk together soy milk and apple cider vinegar. Set aside to curdle.
  3. In a large bowl, combine flour, salt, pepper, mixed herbs and garlic.
  4. Add the chicken chunks to the bowl and mix to coat with the flour mixture.
  5. Put the breadcrumbs in a shallow bowl.
  6. One chunk at a time, dip it in the milk mixture, bread crumbs, milk mixture and bread crumbs again. Then place on the tray.
  7. When you have completed this process with each chunk, bake in the oven for about 10 minutes or until golden brown.
  8. Serve hot!

Creamy Herbecue Sauce


Ingredients

  • 1/4 cup barbecue sauce
  • 2 tablespoons Tofutti Better Than Cream Cheese
  • 1 tablespoon mixed herbs

Method

  1. In a bowl, mix the barbecue sauce and Tofutti vigorously with a fork.
  2. Stir through the mixed herbs and serve.

I really want to try these, they look amazing, but after trying to make the meatlovers pizza, I’ve found that my usual shop has stopped selling frozen mock chicken chunks 🙁 Any ideas where I might try?
