Light Pad Thai

Difficulty: Easy Serves 2 This pad Thai has become a staple meal for my current health kick. The overall taste is fresh and light, the sauce isn't overpowering but the flavours compliment each other perfectly. I've roughly estimated a large serving of this dish to be less than 300 calories but don't hold me to that, I'm awful at maths. Instead of regular rice noodles, I've been using a brand of noodles called SlimPasta which are literally under 10 calories per serving and take about 1 minute to cook.
