5 Ingredient Lemon Ice Cream Slice

Fam, I know you’re always down for an ice cream slice recipe and damn, Nature’s Charm‘s products make it so bloody easy to whip these up with hardly any thought.

Ingredients

  • 18 vegan rectangular biscuits (I use Nice but use whatever you like)
  • 2 cans Nature’s Charm Coconut Whipping Cream (refrigerated overnight)
  • 1 can Nature’s Charm Sweetened Condensed Coconut Milk
  • 1 1/2 lemons (juice and grated rind)
  • 1 1/2 teaspoons vanilla extract

Method

  1. Find a baking tin or dish that will sit 9 biscuits evenly and snug. Line with baking paper and lay 9 of the biscuits face down in the tin, evenly spaced.
  2. Add the Nature’s Charm Coconut Whipping Cream, Nature’s Charm Sweetened Condensed Coconut Milk, the juice and rind of the lemon and vanilla extract to a food processor.
  3. Process until smooth and creamy.
  4. Very carefully pour the mixture into the tin and smooth out on top.
  5. Lay the remaining 9 biscuits on top, face up to mirror the bottom layer of biscuits. Gently press down a little to secure them.
  6. Carefully transfer the tin to the freezer and allow to set overnight.
  7. Remove the slice from the freezer about 15 minutes prior to serving. Cut into 9 even slices and serve!
