Parsley + Lemon Koftas w/ Tzatziki

The vegan community let out a collective “OMG!” when Funky Fields Minced hit the shelves at Woolworths earlier this year, a beef mince substitute that has taken the meat aisle by storm! I may or may not have purchased 8 packets the first time I found it so I was stoked when they were keen to team up and create a sick summer recipe with me!

With warmer weather slowly creeping in, so too are the invites to summer-type gatherings. No longer will you need to subject yourself to the salad section of the table, or suffer through a sub-par veggie sausage because my Parsley + Lemon Koftas w/ Tzatziki recipe are here to take your next BBQ to the next level. Serve ’em on their lonesome or bung them into a pita with loads of fresh salad and you’ve got yourself a winner, friend!

Ingredients

Koftas

  • 1 packet Funky Fields Minced
  • 1 generous handful of continental parsley, finely chopped
  • 1 clove garlic, minced
  • Juice and rind of one lemon
  • Salt and pepper
  • 1 tablespoon olive oil

Tzatziki

  • 1/3 cup natural coconut yoghurt
  • 1 clove garlic, minced
  • 1/4 Lebanese cucumber, finely diced
  • Small handful continental parsley, finely chopped
  • 1 teaspoon salt

Method

  1. In a large bowl, combine the Funky Fields Minced, parsley, garlic, lemon, salt and pepper.
  2. Using a fork, slowly press down and mix to combine well.
  3. Grab a mechanical ice cream scoop and use it to portion out mince mixture before rolling into a little sausage shape.
  4. Repeat with the remaining mixture. At this point, cover and pop them in the fridge if you’d like to cook them up later.
  5. When you’re ready, add the olive oil to a frypan over medium-high heat.
  6. Add the koftas and cook for a minute or so before turning. Repeat this until all sides are cooked and remove from the heat.
  7. In a small bowl, mix together the coconut yoghurt, garlic, cucumber, parsley and salt to make the tzatziki.
  8. Serve as is or in a pita bread stuffed with salad.
