Quick Salt + Pepper Tofu

Not gonna lie, I’ve felt kinda meh when it comes to cooking lately but last night I dragged myself to the supermarket in search of #inspo and I found it in a humble block of tofu. Who woulda thought?

This salt + pepper tofu is quick and easy to make, plus by using firm tofu you’re not going to have it fall apart on you as it cooks (a bonus!)

Ingredients

  • 1/2 cup vegetable oil
  • 1/2 cup soy milk
  • 1/2 teaspoon apple cider vinegar
  • 1/2 cup plain flour
  • 2 tablespoons corn flour
  • 1 teaspoon white pepper
  • 1 tablespoon salt
  • 1/2 teaspoon ground ginger
  • 2 teaspoons garlic powder
  • 1 teaspoon onion powder
  • 1 450g block firm tofu, lightly pressed and cut into cubes
  • 1 spring onion, sliced
  • 1 tablespoon minced chilli

Method

  1. Pour the oil into a medium-sized saucepan and begin put on the cooktop at a medium-high heat.
  2. In one small bowl, whisk together the soy milk and apple cider vinegar and set aside.
  3. In another small bowl, combine the plain flour, corn flour, white pepper, salt, ground ginger, garlic powder and onion powder.
  4. Coat the cubes in the milk mixture before tapping off the excess liquid and gently pressing into the flour mixture.
  5. In batches, gently place the coated cubes into the hot oil and cook on one side until golden, then carefully flip and cook on the other side. Allow to drain on paper towel.
  6. Along with the last batch, add the minced chilli and spring onion and then drain along with the tofu on the paper towel.
  7. To ensure maximum crispiness, serve immediately with your favourite dipping sauce.

This was absolutely delicious. My partner made a dipping sauce and we had on top of a simple salad for a summer dinner… just like s&p squid from the pub!
