Level 5 Vegan: Make Your Own Almond Milk

Almond Milk

Been wanting to take your veganism to the next level but didn't know how? You know I got you fam! This post is all about making your own goddamn almond milk - that's level 5 shit! You may be surprised to learn that almonds do not have nipples, so you cannot extract milk the traditional way. The best part about that is (other than the obvs lack of cruelty) is that you don't have to wake up at 4am to milk your cows or whatever. TBH making your own almond milk is actually super easy and you don't really need anything too spesh or weird to pull it all together. This guide will yield about 1L of almond milk but since it...

Kombucha Made Easy

Kombucha is one of those things that has really taken over the health industry and with good reason. It's full of antioxidants, probiotics which help keep your guts health AF but also help with immunity, energy and general wellbeing. Plus it tastes hella good - the only problem is that buying kombucha is kinda spenno, with a litre in Australia costing upwards of $8. If you drink as much booch as I do, that adds up pretty damn quick! If you’re like me, you love the booch but don’t love the freaking huge price tag that can come along with it. That’s why about a year ago I started making my own kombucha and I’ve never looked back. With a few basic...

Grapefruit Gin + Tonic

Grapefruit G+T

Difficulty: Easy Serves 4 Well, we've somehow survived 2016 (nearly) and that means we have bloody earned a drink or two (or ten). My Grapefruit Gin + Tonic is such a fun drink to whip out over the festive season cos it's fresh, fruity and bright. Plus you can whip up a batch in a few minutes, meaning you can spend more time drinking and less time prepping. Bonus. Ingredients 200mL gin 120mL Cointreau 1 1/2 cups red grapefruit juice 4 cups cubed ice 1 cup tonic water Red grapefruit and red currants to decorate Method Mix together the gin, Cointreau and grapefruit juice together. Cherry Banana Smoothie

Cherry Smoothie

Difficulty: Easy Makes 1 large smoothie or 2 small smoothies So smooth that Rob Thomas and Santana wrote a song about it. If you pay attention to my Instagram, you'll know that recently I made the best smoothie of my life. It seems like a pretty big call, and it is, especially for someone who ain't too fussed on smoothies in the first place. The best thing about it? It takes a few minutes to throw together and all of the ingredients are things you should already have lying around. Ingredients 1 large banana 10 fresh cherries 1/2 cup crushed ice 1 1/2 cups soy milk 1 tablespoon maple syrup 1/4 cup coconut yoghurt (I used Nudie Vanilla Coconut 'cos it's vegan now!) Method Rip up the banana and chuck it into...

Basil Seed, Rose & Elderflower Cooler

Basil Seed Cooler

Difficulty: Easy Serves 2 I've had basil seed drinks at vegan restaurants but traditionally these bevvies usually contain honey, so the pre-packaged ones at Asian groceries are usually a no-go for vegans. Bummer. The good news is that these little seeds are easy to pick up from your local Asian grocer too and since they only take about 10 minutes to make, you can use your stash to make one of these drinks quicker than it would take to go and buy one! Because basil seeds are so subtle in flavour, you can really combine them with any syrup you like but this time I've gone for rose and elderflower to send off summer in style (good riddance!) Ingredients 1 tablespoon basil seeds 1/2 cup warm...

The Basil-Granate is fruity, fresh and fun plus it's easy to throw together. Don't do alcohol? Just leave it out and you'll still have a tasty mocktail in your hand all night long. Here's to 2016, I've got so many exciting things to share with you all in the New Year! Vegan Eggnog

Difficulty: Easy Serves 4 Are you ready to nog?! Also, are you ready for all of the times I'm going to use 'nog' in this post? Ah well, too bad because I'm nog going to stop anytime soon. I'm going to be straight up and let you know that not once in my life have I tasted real eggnog but I get the gist and eggs are gross so it's better for all of us if we just straight up ditch them from this recipe. Who really needs eggs when you're making what is essentially a frothy, Christmassy, alcoholic milkshake?! Nobody, that's who. Let's celebrate our new arrangement with the adding of alcohol to milk. Ingredients 1 400mL can full fat coconut cream (placed upside down...

Watermelon, Lime & Mint Popsicles

Watermelon Popsicle

Difficulty: Easy Makes about 10  Summer has been sprung on us a little early this year so I've gone into overdrive coming up with treats to bring a little coolness into your lives. These popsicles can be in your freezer within minutes and once set, you'll be thanking your past self for their forward thinking! Plus, turn these into a wicked cocktail popsicle by adding a shot of white rum or vodka (I may or may not have done that too). Ingredients 700g seedless watermelon Juice from one lime Handful of mint leaves 1/2 cup white rum or vodka (optional) Method Cut up the watermelon into reasonable sized chunks and throw into the blender. Add the lime juice and alcohol (if you're using it) and whizz together until blended. Pop a...

Berry Breakfast Smoothie

Difficulty: Easy Makes one large smoothie or two small ones Now the warmer weather is kickin' in, I don't really feel like a lot for breakfast, especially if it takes a lot of time and effort to put it together. This berry breakfast smoothie is the perfect breakfast solution because it's quick, easy, filling and good for you while tasting bloody bitchin'. Ingredients 1 cup fresh berries (I used a combo of blueberries and strawberries) 1/2 cup rolled oats (use GF oats or quinoa flakes for a GF alternative) 2 teaspoons chia seeds 1/2 cup ice 2 tablespoons maple syrup 1 cup almond milk Method Wash and cut the stems off the berries. Chuck all ingredients into a blender and blend until well combined. Serve immediately and enjoy! ...

Blueberry, Basil & Lime Fizz

Difficulty: Easy-Medium Makes about 3L I haven't made a drink for a while and thought it was about time I quenched my thirst to do so. You might think I'm crazy for adding basil to a fruity concoction, but once you try it you'll be all "I'm so sorry I doubted you, Chelsey! Will you ever forgive me?" I probably will forgive you, but perhaps make it first and we'll cross that bridge when we come to it. If you're feeling party, you could add some vodka to this one for your next occasion and it would go down a real treat. Ingredients Syrup 2 1/2 cups blueberries (I used frozen but fresh are good too) 1 bunch basil 1 cup caster sugar Rind of one lime 2 cups...

Pink Lemonade

Difficulty: Easy Serves 4 If you've been following Like a Vegan for a while, you would already know that I don't like summer. At all. Because of this I constantly have to do things to make summer more bearable. For my birthday recently, a great friend of mine made me an extreme Italian vegan feast and did a fantastic job. The least I could do was take a beverage along for the crew to enjoy so I took this Pink Lemonade. You don't have to make it alcoholic but it is a premo cocktail if you're that way inclined. Ingredients 2 lemons, sliced 1 packet of sherbet Ice 4 tablespoons grenadine syrup 4 shots vodka 1 large bottle of lemonade Method Grab four tall glasses and run some of the lemon around...

Iced Chocolate

Difficulty: Easy Serves 4 This isn't exactly the most complicated of treats to make, but sometimes you just need a bit of inspiration to make something delicious. A wicked LAV reader got me onto CocoLuscious ice cream, which is conveniently stocked at a store around the corner from me, bonus! As I often do with new products, I thought about all the dope things I could make with it. As long as you have all the ingredients, you can whip this one up in a jiffy. Ingredients 1 carton Soyatoo Topping Cream Vegan friendly chocolate topping or melted chocolate 1 tub CocoLuscious ice cream in vanilla choc chip 1 carton soy milk Cocoa Method In a bowl, whip the topping cream until light and airy. In a soda glass, slowly squeeze...

Watermelon & Mint Daiquiris

Difficulty: Easy Serves 2 Watermelon is definitely one of my favourite summer fruits. It's perfect for juicing, so I thought I would combine some watermelon with mint to make some fresh daiquiris! I'm lucky enough to have a Magic Bullet, so whipping these babies up was a breeze. I'm sure that far out dude Berman from the infomercials would love to have a sip on one of these from a party mug (which I do have), but in the name of aesthetics I opted for traditional glassware. Ingredients 4 cups seedless watermelon, chopped (obviously remove the skin first) 4 shots white rum Juice of one lime 2 tablespoons sugar syrup (basically just sugar and water boiled) 8 ice cubes Handful of mint Method Depending on the size of your blender, you...
