This recipe takes only minutes to whip up and tastes great on crackers, in pastas and even straight from the jar. Ingredients 1 cup raw cashews (soaked for 8 hours) Juice of a half lemon 2 tablespoons non-dairy plain yoghurt 1 tablespoon white miso paste 1 teaspoon salt 2 tablespoons nutritional yeast Method Chuck the soaked cashews into a food processor and pulse for 60 seconds. Spring Green Vegetable Quiche

Difficulty: Easy Serves 4-6 You know, I wasn't really a massive fan of quiche in my non-vegan days but somehow since losing animal products I've gained the taste for it. Recreating this classic dish is really so simple and TBH you'll wonder why you ever made quiche with eggs in the first place! This is a great salad that you can serve as a meal or as a side dish if you want it to serve more people.
