Peanut Butter Swirl Brownies

Difficulty: Easy Makes 12 Brownies are one of the easiest things to throw together at short notice and when I'm pressed for time I love to whip up a batch to take with me to a dinner party. You know what takes the standard awesome brownie to the next level of awesomeness? Peanut butter!   Just a little swirl of the stuff makes all the difference. Note: I used a regular square pan so these brownies are pretty thick. If you use a bigger pan, you'll get thinner brownies and you'll need to reduce the baking time accordingly. Ingredients 1 1/2 cups soy milk 1 teaspoon apple cider vinegar 2 cups plain flour 2 cups caster sugar 1/2 cup cocoa 1 teaspoon baking powder 1 teaspoon salt 1/2 cup canola oil 1 cup...

Throwing a recipe together was pretty simple but the taste is far from it, pretty awesome actually. I've added a can of the Soymilke caramel to the mix but you're more than welcome to make your own caramel if you're not on a time crunch or can't get access to it. I've got the baked cheesecake bug now, look out! Custom Fries

Difficulty: Easy Makes one large bowl My brother used to make a dish he called "Custom Fries" and I always used to try and steal them. Since I've been on a health kick, I've really craved a good chip, so I thought I'd try my hand at a healthier, baked version of those Custom Fries. These are seriously crispy, flavoursome and most importantly they satisfy that chip craving! Ingredients 8 potatoes, skin on 1 tablespoon onion powder 1 tablespoon garlic powder 1 tablespoon dried basil 1 tablespoon salt Olive oil spray Method Preheat oven to 180°C. Stab the potatoes with a fork and cook in the microwave on high for 10 minutes. After allowing for the potatoes to cool slightly, remove from the microwave and cut into long strips. Place on a baking tray...

Popcorn Chicken with Creamy Herbecue Sauce

Difficulty: Medium Serves 10 as a snack or 4 as a meal Now, as a vegan there are two professions I despise; clowns and colonels. Admittedly, I still watch fast food ads and drool over a burger or piece of chicken but I love getting in the kitchen and satisfying those cravings vegan style! Recently I've been craving some KFC (Kruelty Free Cuisine) so I thought I'd take a stab at some Popcorn Chicken. I wanted to take a break from deep frying, so the fact that these are baked is just another reason to give them a try! Served with my Creamy Herbecue Sauce, this makes the perfect party snack or as a meal with some oven baked potato fries. Ingredients 1 1/4...
