Creamy Basil Pasta

Difficulty: Easy Serves 4 Oh hey there, it's been a little minute! It's time for my first recipe of the year and boy, is it a doozy! I've teamed up with my friends at Orgran yet again to create this tasty little number; a creamy as hell pasta sauce, bursting with basil-y flavour and served with Orgran's amazing Quinoa Spirals. Ingredients 1 1/2 cups raw cashews 1 packet Orgran Quinoa Spirals 1 1/4 cup non-dairy milk (I used soy but your fave will work just fine) 2 tablespoons olive oil 1 bunch fresh basil, chopped 2 teaspoons salt 1/4 teaspoon white pepper 1 teaspoon onion powder 1 teaspoon garlic powder 1 tablespoon lemon juice 1/2 cup nutritional yeast (plus extra to serve) Method Chuck the...

Peach, Basil & Custard Tart

Difficulty: Medium Serves 6-8 Even though it may not be evident on the blog, it's no secret that I favour the savoury over the sweet. In saying that, I am always trying super duper hard to come up with desserts that I actually want to eat myself, rather than just taking a bit to confirm it's good and then pushing it to the side. This is where my Peach, Basil & Custard Tart comes in. Peach and basil have long been a favourite in pies but I wanted to introduce them to my dear friend, custard. These three flavours work together like Destiny's Child in their glory years, each bringing something powerful to the table. Which one is the Beyoncé? You'll just have to...

Blueberry, Basil & Lime Fizz

Difficulty: Easy-Medium Makes about 3L I haven't made a drink for a while and thought it was about time I quenched my thirst to do so. You might think I'm crazy for adding basil to a fruity concoction, but once you try it you'll be all "I'm so sorry I doubted you, Chelsey! Will you ever forgive me?" I probably will forgive you, but perhaps make it first and we'll cross that bridge when we come to it. If you're feeling party, you could add some vodka to this one for your next occasion and it would go down a real treat. Ingredients Syrup 2 1/2 cups blueberries (I used frozen but fresh are good too) 1 bunch basil 1 cup caster sugar Rind of one lime 2 cups...

Kale and Basil Pesto

Difficulty: Easy Makes approximately 1 1/2 cups Pesto is one of my favourite condiments but it's not often that I'm able to eat it at restaurants, even most of the store bought ones contain dairy. Screw that, making your own is so easy to do anyway, plus you can add whatever other ingredients tickle your fancy! I chucked kale into mine make it super green and give it an added health boost. The consistency of this pesto is more like a dip, so if you want it a tad more saucy, keep adding oil until you're happy. Ingredients 4 curly kale leaves 1 small bunch basil Juice of one lemon 3 tablespoons olive oil 1/2 cup pine nuts Salt Method Cut the stalks off the kale, tear it up and throw...
