White Chocolate & Macadamia Cookies

Makes 24 cookies

Fresh out of the oven, these delicious cookies are the perfect with a cup of tea or a cold glass of soy milk before bed.

Ingredients

  • 2 teaspoons egg replacer
  • 4 tablespoons water
  • 1 cup vegan margarine, I use Nuttelex
  • 2/3 cup brown sugar
  • 1 1/3 cups caster sugar
  • 1 1/2 teaspoons vanilla essence
  • 3 cups flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup unsalted macadamia nuts
  • 2 blocks of King William white chocolate, broken into pieces

Method

  1. Preheat oven to 150°C.
  2. Combine egg replacer and water in a small bowl and set aside.
  3. Cream the butter and sugar in a large bowl.
  4. Next, beat in vanilla and egg replacer mixture.
  5. Sift in flour, salt and baking soda, combine well.
  6. Add white chocolate and macadamia nuts.
  7. Roll heaped tablespoons of mixture into balls and evenly distribute 12 per lined cookie sheet.
  8. Bake for 15 minutes, these cookies will not brown.
  9. Cool on sheets for 10 minutes, then transfer to cooling racks.

These were just delicious, I made them for all my non vegan family for Christmas and everyone was delighted!
