Pea, Mint + Feta Salad

Traditionally, salads are served as a little joke at Christmas, to make us all think we give a damn about consuming an acceptable amount of greens on our day of days.

The good news about my Pea, Mint + Feta Salad is that the joke is now on us because it tastes so good, you’ll be piling it up on your plate. Even better news? You can prepare most of it the day before and combine it all together on the day!

Ingredients

    • 2 cups frozen baby peas
    • 2 cups Brussels sprouts
    • 100g snow peas
    • 1/4 bunch mint, finely chopped
    • 1 block of vegan feta

Dressing

    • 1/8 cup olive oil
    • Juice of 1 lemon
    • 1 teaspoon dijon mustard
    • 1 garlic clove, minced
    • 1 teaspoon sugar
    • Pinch of salt

Method

    1. Steam the baby peas for a few minutes. Immediately transfer to a bowl and place in the fridge to cool.
    2. Shred the Brussels sprouts and spread them over a medium-sized serving platter (or bowl if you’d prefer.) Toss with the freshly chopped mint.
    3. Trim the ends off the snow peas and slice into thin, long strips. Set aside.
    4. Sprinkle the cooled baby peas over the Brussels sprouts and toss gently. Top with the sliced snow peas.
    5. Crumble the feta over the top of the salad.
    6. Prepare the dressing while whisking all of the ingredients together. Drizzle over the salad, top with fresh mint leaves and serve.

This looks so lovely and refreshing for what is bound to be a very hot Christmas.
