Crispy “Duck”, Fig & Blue Cheese Salad

Serves 4


Out of the three items in the title, typically only one of these is vegan. With the advent of wonderful meat and dairy substitutes, a slightly more fancy salad is easy to make. We can spend all day coming up with a good title for fake duck but we all know the best one isn’t really appropriate. I’m just going to censor myself and call it “duck”.

Ingredients

  • 1/2 packet mock duck
  • 4 large handfuls mixed salad leaves
  • 4 figs, cut into quarters
  • 1/4 cup pecans or walnuts
  • 1/4 block Blue Style Cheezly
  • 1/4 cup olive oil
  • 1/4 cup balsamic vinegar
  • 1 tablespoon brown sugar
  • 2 tablespoons seeded mustard

Method

  1. Combine the oil, balsamic vinegar, brown sugar and mustard, mix well (you may want to adjust according to your taste).
  2. Cut the “duck” into strips and lightly fry until crispy.
  3. Place “duck”, figs and pecans attractively on the plate atop the mixed leaves
  4. Drizzle with the dressing and crumble the Cheezly over the top.
  5. Serve with some crispy bread and enjoy!
