“Tuna” Salad Sandwich

This isn’t really a recipe, just a simple serving suggestion for a light lunch or dinner. In saying that, you’d be forgiven for thinking the ingredients and process are way more complex than they are. I used focaccia for mine but it really works with any type of bread you have lying around and of course you can add any other salad ingredients you see fit.

Ingredients

  • 1 packet of vegan tuna
  • 1/2 cup vegan mayonnaise (I use Praise 98% fat free mayonnaise)
  • 1 spring onion, finely sliced
  • Splash of lime juice
  • Salt and pepper to taste
  • 2 handfuls rocket leaves
  • 1 tomato, sliced
  • 2 bread rolls (I used focaccia but bagels would work nicely as well)

Method

  1. Using a hand mixer or food processor, blend tuna and mayonnaise.
  2. Transfer to a bowl and add lime juice, salt, pepper and spring onion, mix well.
  3. On the base of the bread roll, spread out a generous amount of rocket, followed by the tomato.
  4. Gently spread the tuna salad mix evenly on top and add the lid of your bread roll.
