Crispy Mashed Potato Balls

Controversial food opinion: mashed potato is a waste of potato potential. Before you @ me or chuck all that mashed potato you’ve made in the bin, I am pleased to announce that I’ve found an opportunity for carby redemption!

These Crispy Mashed Potato Balls will make an awesome side for your festive spread but would also make a great pot luck or contribution to a general holiday party situation. Plus, you can prepare a lot of it in advance, which is always a massive bonus at this time of year!

Ingredients

  • 2kg mashing potatoes, peeled
  • 1/4 cup vegan butter or margarine
  • 1/3 cup nutritional yeast
  • 3 cloves garlic, minced
  • 1 tablespoon salt
  • 1 cup soy milk
  • 1 tablespoon apple cider vinegar
  • 2 cups dry breadcrumbs
  • 1 tablespoon garlic powder
  • 1 tablespoon dried mixed herbs
  • Vegan gravy, to serve

Method

  1. Pop a large pot of water on the stove to boil, while you chop your potatoes into small chunks (this will help them cook faster.)
  2. Once boiling, add the potatoes and cook for about 15-25 minutes, or until cooked through.
  3. Drain the potatoes and transfer them to a large bowl. Mash or rice the potatoes until smooth.
  4. Add the vegan butter, nutritional yeast, garlic and salt and mash through until nicely combined. Cover and pop in the fridge to cool until you’re ready for cooking.
  5. Preheat your oven to 180°c and line large baking sheet with baking paper.
  6. In a large, shallow bowl, mix together the soy milk and apple cider vinegar. In another large, shallow bowl, combine the dry breadcrumbs, garlic powder and mixed herbs.
  7. Using a spring-loaded ice cream scoop, measure out the mashed potato and roll into balls (they should be a little bigger than golf balls.)
  8. Dip each ball into the soy milk mixture and then into the breadcrumb mixture to coat completely, before placing on the baking tray.
  9. Repeat with the remaining balls and be sure to leave a little space between each one on the tray.
  10. Bake in the oven for 40-50 minutes or until golden on the outside. Serve immediately with vegan gravy.
