Green Curry Mac & Cheese

When you can’t decide between two comfort foods, the only thing to do is combine them! I’ve teamed up with my pals at Chef’s Choice (the legends behind Nature’s Charm) to create the ultimate comfort meal: Green Curry Mac & Cheese!

If you didn’t already know, I am obsessed with Chef’s Choice Creamy Coconut Milk because it’s creamy as heck. One cute lil fact is that it was also Thailand’s first coconut milk in a can and they keep it as close to its natural state as possible. Premo. Plus, it’s the perfect companion to the Chef’s Choice Green Curry Paste, both of which you’ll need to recreate this recipe.

Ingredients

  • 500g of macaroni or pasta shells
  • 2 cans Chef’s Choice Creamy Coconut Milk
  • 1/2 cup nutritional yeast
  • 4 tablespoons Chef’s Choice Green Curry Paste
  • 2 tablespoons corn flour
  • Spring onion, chilli, lime and extra nutritional yeast to garnish (optional)

Method

  1. Fill a large saucepan with water and bring it to the boil before adding the pasta. Cook until al dente, drain and set aside.
  2. Reduce the heat to medium-high and in the same saucepan, add the Chef’s Choice Creamy Coconut Milk, nutritional yeast and Chef’s Choice Green Curry Paste. Whisk until combined.
  3. Add the cornflour while whisking and continue to whisk until the mixture has thickened.
  4. Chuck in the pasta and fold through until it’s well distributed.
  5. Transfer to a serving bowl, garnish and serve immediately.
