I once tried some vegan marshmallows and after tasting them I was less than impressed with the texture and the taste. Recently I caught wind of some new marshmallows called Dandies, made by Chicago Soy Dairy and thought I would give them a try. My initial thought was “what the eff?! These are amazing” and then my mind instantly went into overdrive thinking of all the banging vegan goodies I could make with them. Rocky road was the first recipe to come to mind but then I thought, why the heck not bump up the deliciousness and make this bitch into a cake? Now I don’t need you to tell me this was a great idea, but you can if you want.
Ingredients
- 12 Digestive biscuits
- 1/2 cup margarine (I used Nuttelex), melted
- 2 tablespoons caster sugar
- 1/3 cup cocoa powder
- 1 carton of Soyatoo Topping Cream
- 1 tub of Tofutti Better Than Cream Cheese
- 1 large block (250g) Whittakers Dark Chocolate (not the Ghana Dark) or another vegan chocolate of your choosing, melted
- 1 bag of Dandies vegan marshmallows
- 1 small bag of glace cherries (both Coles and Big Sister brands do not contain cochineal/carmine).
- 1/4 cup granulated nuts
Method
- Grease a springform pan.
- In a large bowl, crush digestive biscuits until fine.
- Add the cocoa, caster sugar, margarine and mix well.
- Press the biscuit mixture into the base of the tin firmly and evenly, set aside.
- In a large bowl, combine the Soyatoo and Tofutti.
- Add 2/3 of the melted chocolate and mix really well.
- Pour on top of the base and place in the fridge to cool for about 30 minutes.
- Once the topping has firmed up, scatter the marshmallows and cherries on top.
- Drizzle the remaining melted chocolate on top and then sprinkle on the nuts.
- Place in the fridge to set, serve and enjoy!
I am super in love with this. Also, where does one find Whittakers chocolate and Dandies in Sydney? Also, I’ve read a lot that glace cherries contain cochineal/carmine (insect colouring). Is there a vegan friendly type?
I get Whittakers from Woolworths or Big W and the Dandies from Cruelty Free Shop online. I haven’t heard that about the glace cherries but thank you so much for bringing it to my attention! I will definitely look into it, in the meantime though I don’t think you’ll be disappointed with the taste if you just leave them out!

I was shocked too! Generally most red food colouring should be investigated. I thought it was pretty brutal to crush up beetles so that food could be red, but then that works the same with any animals used for human use!

Not sure if you saw my Facebook post however I thought I’d check out the glace cherries at the supermarket today. Both the Big Sister and Coles brands use colour 129 (allura red) which is not animal derived. Woohoo!
Oh My Lord! This looks devine. Thank you. I may just have to make this for my son’s birthday. He is 1 in 5 weeks so he doesn’t get imput. :o)

Got the marshmallows, now where did you get the soy topping cream thing?

Just recently, Soyatoo announced that they’re temporarily not manufacturing the Topping Cream due to its lack of ‘whippability’ 🙁 The whip-factor plays absolutely no part in most of the recipes I use the Topping Cream for.
I’m trying to come up with some kind of alternative, but in the meantime I would suggest contacting Soyatoo here and letting them know that we want the Topping Cream, even though it can’t be whipped! Hopefully with enough demand they will manufacture it anyway.
I emailed them! That’s very sad news, I’m not sure what to do! I actually got the marshmallows in America, and over there they had soy and rice whipped cream! OMG. Unfortunately I couldn’t take them back home but they looked amazing, exactly the same style and bottle you get regular whipped cream in in Australia.

You can buy the Soyatoo Rice Whip and Soy Whip from Vegan Perfection. Unfortunately I don’t think they’ll work for this recipe but they are good for other things! The cans can be a little temperamental though so I really do prefer the Topping Cream.
Hopefully they’ll get the product to the standard they want soon and let us have it again!
Just a heads up that you can find dandies on iherb.com for super cheap and their shipping is really reasonable and fast to australia. They also have vegan white chocolate peanut butter and some other cool things im sure youd love!
