These little guys are quite possibly one of the easiest things you can make in a very small window of time. Great lunchbox fillers, my Apricot & Almond Logs remind me of the treats I used to buy from my school canteen as a kid. These ones are even better though because you can control what goes in them! I like to keep mine in the fridge until half an hour before serving but should last in an airtight container for a week or so (although I doubt they’ll be around that long!)
Ingredients
- 1 cup dried apricots
- 1/3 cup sultanas
- 2/3 cup blanched almonds
- 1 cup desiccated coconut
Method
- Chuck the apricots, sultanas, almonds and half of the coconut into a food processor or blender and mix until completely combined.
- Divide the mixture into 12 even pieces and roll into little logs.
- Roll in the remaining desiccated coconut and you’re done!
Yes! I love making versions of these – the little rectangle apricot bites were my favourite lunchbox treat when I was at school. It’s only now I realise how much sugar was packed into those ‘healthy’ treats. So much better to make them – they look delicious 🙂
