Apricot + Almond Logs

Makes 12

These little guys are quite possibly one of the easiest things you can make in a very small window of time. Great lunchbox fillers, my Apricot & Almond Logs remind me of the treats I used to buy from my school canteen as a kid. These ones are even better though because you can control what goes in them! I like to keep mine in the fridge until half an hour before serving but should last in an airtight container for a week or so (although I doubt they’ll be around that long!)

Ingredients

  • 1 cup dried apricots
  • 1/3 cup sultanas
  • 2/3 cup blanched almonds
  • 1 cup desiccated coconut

Method

  1. Chuck the apricots, sultanas, almonds and half of the coconut into a food processor or blender and mix until completely combined.
  2. Divide the mixture into 12 even pieces and roll into little logs.
  3. Roll in the remaining desiccated coconut and you’re done!

Yes! I love making versions of these – the little rectangle apricot bites were my favourite lunchbox treat when I was at school. It’s only now I realise how much sugar was packed into those ‘healthy’ treats. So much better to make them – they look delicious 🙂
