5 Ingredient Quinoa Crunch Bars

It always feels bloody good when you make your own snacks for the week! Not only do they taste better and you know what’s in ’em, you get to gloat to coworkers by saying “oh these? I just made them!” They’ll never know that my Quinoa Crunch Bars only take about 20 minutes to make with only 5 simple ingredients. Trust me, I won’t tell. I made these babies with the help of the Quinoa Puffs from Orgran, which give ’em a helluva crunch!

Ingredients

  • 2/3 cup coconut oil
  • 1/3 cup rice malt syrup
  • 1 teaspoon ground cinnamon
  • 1 cup crushed raw nuts (I used cashews and almonds)
  • 2 cups Orgran Quinoa Puffs

Method

  1. Preheat your oven to 180°C and line a brownie pan with baking paper.
  2. In a large saucepan, melt together the coconut oil and rice malt syrup over high heat. Continue to stir as the mixture begins to boil.
  3. Add the ground cinnamon and mix through the liquid before taking off the heat.
  4. Stir through the raw nuts and Orgran Quinoa Puffs until well coated with the wet mixture.
  5. Pour into the lined pan and spread out evenly, pressing down gently with the back of a measuring cup.
  6. Pop into the oven and bake for 15 minutes, remove and set aside fo 5-10 minutes.
  7. Once the mixture is firm enough to slice, gently cut into the desired shape and set aside again to cool completely.
  8. Store in an airtight container until ready to serve.
