Even though I’m not in the gluten-free crew myself, I like being prepared to cater for other dietary requirements when the time comes. Luckily, Orgran make a range of affordable GF ingredients you can pick up at your local supermarket so you don’t have to make your own GF flour mix when making my 8 Ingredient GF Choc Chip Cookies!
Ingredients
- 3/4 cup vegan margarine or butter
- 3/4 cup tightly packed brown sugar
- 1/4 cup caster sugar
- 1 teaspoon vanilla extract
- 1/2 teaspoon salt
- 2 cups Orgran Gluten Free Self Raising Flour
- 1 tablespoon non-dairy milk
- 1 cup chopped vegan chocolate
Method
- Preheat the oven to 180°C and line two baking trays with baking paper.
- In a large bowl, cream together the vegan margarine, brown sugar and caster sugar until fluffy.
- Stir through the vanilla extract and salt before adding the Orgran Gluten Free Self Raising Flour.
- Combine well until smooth, adding the non-dairy milk to bring it all together.
- Fold through the chopped vegan chocolate and form a ball of dough.
- Wrap the dough in cling wrap and place in the fridge for 30 minutes to firm up.
- Remove the cling film and break the dough into 12 even, golf-ball sized pieces.
- Spread out evenly on the baking trays and with the back of a spoon, gently press down on each ball of dough to flatten slightly.
- Place in the oven to bake for 30 minutes.
- Remove from the oven and cool on the tray before transferring to a cooling rack to cool completely.
