8 Ingredient GF Choc Chip Cookies

Even though I’m not in the gluten-free crew myself, I like being prepared to cater for other dietary requirements when the time comes. Luckily, Orgran make a range of affordable GF ingredients you can pick up at your local supermarket so you don’t have to make your own GF flour mix when making my 8 Ingredient GF Choc Chip Cookies!

Ingredients

  • 3/4 cup vegan margarine or butter
  • 3/4 cup tightly packed brown sugar
  • 1/4 cup caster sugar
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon salt
  • 2 cups Orgran Gluten Free Self Raising Flour
  • 1 tablespoon non-dairy milk
  • 1 cup chopped vegan chocolate

Method

  1. Preheat the oven to 180°C and line two baking trays with baking paper.
  2. In a large bowl, cream together the vegan margarine, brown sugar and caster sugar until fluffy.
  3. Stir through the vanilla extract and salt before adding the Orgran Gluten Free Self Raising Flour.
  4. Combine well until smooth, adding the non-dairy milk to bring it all together.
  5. Fold through the chopped vegan chocolate and form a ball of dough.
  6. Wrap the dough in cling wrap and place in the fridge for 30 minutes to firm up.
  7. Remove the cling film and break the dough into 12 even, golf-ball sized pieces.
  8. Spread out evenly on the baking trays and with the back of a spoon, gently press down on each ball of dough to flatten slightly.
  9. Place in the oven to bake for 30 minutes.
  10. Remove from the oven and cool on the tray before transferring to a cooling rack to cool completely.
