Gluten Free Easy Cheese Sauce

Makes about 2.5 cups
Recently I found myself in a sitch where I needed vegan cheese but did not have access to vegan cheese (what year is this, 2004?) so I had to get crafty and improvise! You probs already guessed from the title that this is gluten free and easy to make but, you guys, it takes less than 10 minutes to make and uses only 7 ingredients.

Ingredients
- 300g silken tofu
- 1 tablespoon miso paste
- Juice of 1/2 of a lemon
- 1 cup nutritional yeast
- 1 cup soy milk
- 1 teaspoon salt
- 1 teaspoon white pepper
Method
- Add all of the ingredients to a food processor and blend until smooth.
- If you are using the sauce as part of a recipe or to save for later, leave in the fridge until required.
- When you’re ready to heat, pour the sauce into a saucepan and whisk over medium heat for 10 minutes (you may want to add more soy milk if it gets too thick).
- Serve immediately and enjoy.
