Makes 9
Fam, I know you’re always down for an ice cream slice recipe and damn, Nature’s Charm‘s products make it so bloody easy to whip these up with hardly any thought.
Ingredients
- 18 vegan rectangular biscuits (I use Nice but use whatever you like)
- 2 cans Nature’s Charm Coconut Whipping Cream (refrigerated overnight)
- 1 can Nature’s Charm Sweetened Condensed Coconut Milk
- 1 1/2 lemons (juice and grated rind)
- 1 1/2 teaspoons vanilla extract
Method
- Find a baking tin or dish that will sit 9 biscuits evenly and snug. Line with baking paper and lay 9 of the biscuits face down in the tin, evenly spaced.
- Add the Nature’s Charm Coconut Whipping Cream, Nature’s Charm Sweetened Condensed Coconut Milk, the juice and rind of the lemon and vanilla extract to a food processor.
- Process until smooth and creamy.
- Very carefully pour the mixture into the tin and smooth out on top.
- Lay the remaining 9 biscuits on top, face up to mirror the bottom layer of biscuits. Gently press down a little to secure them.
- Carefully transfer the tin to the freezer and allow to set overnight.
- Remove the slice from the freezer about 15 minutes prior to serving. Cut into 9 even slices and serve!
