PB + Jam Drop Cookies

Have you ever forgotten about some kind of event where you have to provide baked goods and then you have to think of something the night before, using only ingredients you have lying around? Neither. This recipe was absolutely not created as an exact result of that very situation. BUT IF THEY WERE, I could tell you that these PB + Jam Drops are the best solution to that problem. Promise.

Ingredients

  • 2/3 smooth peanut butter
  • 2/3 vegan margarine
  • 1 teaspoon vanilla
  • 2/3 cup caster sugar
  • 1/3 cup brown sugar
  • 2 1/2 cups plain flour
  • 2 teaspoons baking powder
  • 1/4 cup water
  • 1/3 cup strawberry jam

Method

  1. Preheat oven to 180°C and line two baking sheets with baking paper.
  2. In a large bowl, cream together the peanut butter, vegan margarine, vanilla, caster sugar and brown sugar until fluffy.
  3. Sift in the plain flour and baking powder and mix until combined, gradually adding the water as you go.
  4. Once a dough is formed (use a little extra water if necessary), scoop out a tablespoon of dough and roll into a ball.
  5. Place on the baking sheet and press down gently, then make a well with your thumb.
  6. Repeat with the remaining mixture, placing cookies 5cm apart before baking in the oven for 20 minutes.
  7. Remove the cookies from the oven and if necessary, carefully recreate wells before filling with 1/2 teaspoon of strawberry jam.
  8. Return the cookies to the oven for a further 10 minutes before removing and allowing to cool completely.
