I’ve gotta admit, not only has being hella busy interrupted my blog post flow but it has also meant a severe lack of time to prep tasty eats with a fairly reasonable nutritional content. The good thing about my 20 Minute Muesli Bars is that they take, and you guessed it, 20 minutes to make (ok, maybe a tad longer) so that you can get back to doing that important thing you were doing.
Note: For a sweeter bar, use agave or maple syrup instead of rice malt syrup.
Ingredients
- 2/3 cup coconut oil
- 1/3 cup rice malt syrup
- Pinch of salt
- 1 cup chopped raw nuts (I used a combo of cashews and almonds)
- 1/4 cup seeds (I used a combo of chia and linseeds)
- 1 1/2 cups rolled oats
Method
- Preheat your oven to 180°C and line a small brownie tin with baking paper.
- In a medium-sized saucepan, heat the coconut oil and rice malt syrup until it begins to boil.
- Remove from the heat and add the salt before stirring through the nuts, seeds and oats.
- Combine well and pour into the brownie tin, pressing firmly to the edges.
- Bake for 15 minutes until golden and allow to cool for 5 minutes before slicing.
