20 Minute Muesli Bars

I’ve gotta admit, not only has being hella busy interrupted my blog post flow but it has also meant a severe lack of time to prep tasty eats with a fairly reasonable nutritional content. The good thing about my 20 Minute Muesli Bars is that they take, and you guessed it, 20 minutes to make (ok, maybe a tad longer) so that you can get back to doing that important thing you were doing.

Note: For a sweeter bar, use agave or maple syrup instead of rice malt syrup.

Ingredients

  • 2/3 cup coconut oil
  • 1/3 cup rice malt syrup
  • Pinch of salt
  • 1 cup chopped raw nuts (I used a combo of cashews and almonds)
  • 1/4 cup seeds (I used a combo of chia and linseeds)
  • 1 1/2 cups rolled oats

Method

  1. Preheat your oven to 180°C and line a small brownie tin with baking paper.
  2. In a medium-sized saucepan, heat the coconut oil and rice malt syrup until it begins to boil.
  3. Remove from the heat and add the salt before stirring through the nuts, seeds and oats.
  4. Combine well and pour into the brownie tin, pressing firmly to the edges.
  5. Bake for 15 minutes until golden and allow to cool for 5 minutes before slicing.
