Chocolate bars are one of those things that kinda drop off the radar when you go vegan. In the US you can find tonnes of awesome vegan options but in Australia the choices are way more limited (and usually expensive). Yet again, your girl is here to save the day with the help of my pals at Nature’s Charm, to bring you these hella tasty Vegan Snickers with just 3 (yes, three) ingredients.
Ingredients
- 1 jar Nature’s Charm Coconut Caramel Sauce
- 2 cups roasted and salted peanuts
- 1 cup vegan dark chocolate chips (or buttons, or whatever you’ve got lying around)
Method
- In a large saucepan, bring the Nature’s Charm Coconut Caramel Sauce to the boil, allowing to boil for about 5 minutes.
- Reduce to a simmer for a further 5 minutes (it should be super thin and bubbly) before adding the peanuts.
- Stir well to combine the peanuts.
- Place your silicon mould on a board or tray and carefully fill the mould with the mixture, pressing down gently with the back of a spoon (if you don’t have a silicon mould, see alternative steps below)
- Carefully transfer to the freezer on the tray and allow to set completely.
- When set, melt the chocolate using your preferred method (I do 20 second blasts in the microwave) and transfer to a shallow dish.
- Line a tray with baking paper and keep nearby.
- Gently remove the caramel peanut rectangles from the mould and using a skewer, stick it in the bar and carefully cover in a layer of chocolate before transferring to the lined tray.
- Repeat with the remaining bars until they’re all covered and on the tray.
- Transfer the tray to the fridge and keep there until you’re ready to eat!
Note: You will need a silicon bar mould (kinda like this). If you can’t find something similar, you can use a small lined brownie tin to set, however you’ll need to freeze and allow to thaw enough to cut into rectangles without getting too sticky before covering in chocolate.
