I’m back with my first recipe of the year and what better way to celebrate 2019 than with my good pals Nature’s Charm. This hella easy Jackfruit Chilli has only 6 ingredients, making it the perfect weeknight meal to throw together when you’re low on time and energy, plus it reheats like a dream so it’s an excellent meal prep option too!
Ingredients
- 1 565g can Nature’s Charm Young Jackfruit in Brine
- 1 tablespoon olive oil
- 1 red onion, finely diced
- 30g taco spice mix
- 1 400g can kidney beans
- 2 400g cans diced tomatoes
- Avocado, lime and parsley to serve (optional)
Method
- Drain the jackfruit and gently break apart the chunks, squeezing out any excess liquid as you go. Set aside.
- In a large pan, heat the olive oil on high before adding the red onion.
- Once the onion is translucent, add the jackfruit and taco spice mix, stirring until the spice mix has been spread evenly throughout the pan.
- Drain the kidney beans and add to the pan, along with the tomatoes.
- Stir well and cook for about 5 minutes on high before reducing to low heat and allowing to cook for a further 15 minutes, stirring occasionally.
- When it’s ready, the jackfruit should have broken down and become nice and soft.
- Remove from the heat and serve immediately with any garnish you’d like.
