6 Ingredient Jackfruit Chilli

I’m back with my first recipe of the year and what better way to celebrate 2019 than with my good pals Nature’s Charm. This hella easy Jackfruit Chilli has only 6 ingredients, making it the perfect weeknight meal to throw together when you’re low on time and energy, plus it reheats like a dream so it’s an excellent meal prep option too!

Ingredients

  • 1 565g can Nature’s Charm Young Jackfruit in Brine
  • 1 tablespoon olive oil
  • 1 red onion, finely diced
  • 30g taco spice mix
  • 1 400g can kidney beans
  • 2 400g cans diced tomatoes
  • Avocado, lime and parsley to serve (optional)

Method

  1. Drain the jackfruit and gently break apart the chunks, squeezing out any excess liquid as you go. Set aside.
  2. In a large pan, heat the olive oil on high before adding the red onion.
  3. Once the onion is translucent, add the jackfruit and taco spice mix, stirring until the spice mix has been spread evenly throughout the pan.
  4. Drain the kidney beans and add to the pan, along with the tomatoes.
  5. Stir well and cook for about 5 minutes on high before reducing to low heat and allowing to cook for a further 15 minutes, stirring occasionally.
  6. When it’s ready, the jackfruit should have broken down and become nice and soft.
  7. Remove from the heat and serve immediately with any garnish you’d like.
