Cheesy Garlic Corn Ribs

There’s nothing wrong with jumping on a bandwagon, especially if it’s one as tasty as corn ribs! Now, obviously these don’t taste like their meaty predecessor, however they fun to make, good to eat and have so much potensh for variety!

This version combines vegan parmesan and garlic powder for a punch of powerful flavour that you can serve up with your fave dipping sauce (I went with ranch on this particular occasion!)

Ingredients

  • Vegetable oil for frying
  • 3 ears of corn
  • 1/4 cup vegan parmesan
  • 1 tablespoon garlic powder
  • 1 teaspoon salt
  • 1/2 teaspoon white pepper
  • Spring onion and your favourite dipping sauce to serve (optional)

Method

  1. Heat your oil over medium-high heat in a saucepan (either big enough to fry then corn ribs at once or in batches.)
  2. Remove the corn from the husk and clean it up. Lay it on your chopping board horizontally and chop off the ends before cutting it in half.
  3. Flip the corn so the cut end is now face down on the chopping board. Carefully cut through the centre of the corn twice into quarters (you should end up with 8 ribs per ear of corn.)
  4. Gently add the right amount of corn ribs for the size of your pan and cook until the corn is golden and the ribs have curled. BE CAREFUL OF OIL SPITTING.
  5. Set aside to drain on paper towel.
  6. In a small container, combine the vegan parmesan, garlic powder, salt and pepper.
  7. Add the corn ribs to a bowl and gently toss with the parmesan mixture. Top with spring onion and serve with your favourite dipping sauce.
