Amaretto Sours are my cocktail jam! For years, I just omitted the egg white from the recipe because I didn’t think it was necessary (and obviously not vegan) but recently decided to throw aquafaba in to see what would happen and WHOA, something happened.

Adding aquafaba to the mix makes these cocktails, lighter, fluffier and adds the frothy layer you’d expect from a tradish Amaretto Sour.
Note: Remember to drink responsibly.
Ingredients
- 60mL Amaretto (I used Disaronno but you can check if yours is vegan on Barnivore)
- 60mL fresh lemon juice
- 15mL sugar syrup
- 30mL aquafaba
- Splash of bitters (you can check Barnivore again for this one)
- Ice
- Maraschino cherries (check the colour is vegan)
- Lemon rind
Method
- Measure out the Amaretto, lemon juice, sugar syrup, aquafaba and bitters.
- Add to a generous scoop of ice in a cocktail shaker.
- Shake vigorously for at least a minute (preferably two) so that the aquafaba can do its thing.
- Strain into a fancy glass and serve immediately with some lemon rind and a cherry (or ten.)
