Custard Rice Pudding

For some reason, I always forget that rice pudding is a thing but when Nature’s Charm asked me to create a recipe with their Coconut Custard, it was the first thing that came to mind!

This recipe takes rice pudding to the next level because it’s super custard-y but all up, you’re looking at 4 ingredients to make a bangin’ dessert. You can also eat it hot or cold, making it an easy option for anytime of year!

Note: This is not a super sweet recipe but you can add some maple syrup if you’d like to sweeten things up!

Ingredients

  • 1 400g can of Nature’s Charm Coconut Custard
  • 1/2 cup non-dairy milk
  • 2 teaspoons ground cinnamon (plus a little extra for dusting)
  • 2 cups cooked white rice, cooled

Method

  1. In a large saucepan, whisk together the Nature’s Charm Coconut Custard, soy milk and cinnamon over medium-high heat. Add your sweetener here too if you’re using it.
  2. Once heated through, fold in the cooked rice and reduce to medium heat.
  3. Continue to mix and cook until the rice has heated up completely.
  4. Spoon into individual serving dishes or one larger dish. If you’re serving warm, dust with cinnamon straight away. If you’re serving cold, pop them in the fridge and dust with cinnamon just before serving.
