Guess who got sick of waiting for the Vegan Baileys to hit Australian shores? (Me, it’s me who is sick of waiting.) The good, no, great news is that it’s so damn simple to make your own Irish Cream at home, thanks to Nature’s Charm and their Sweetened Condensed Coconut Milk and Evaporated Coconut Milk!

The best thing about this recipe, other than the fact it’s vegan and easy, is that it’s super easy to customise. The second best thing about this recipe is that it makes an incredible gift. Just chuck it in one big bottle or a few small ones, add a handmade label and you’re good to go.

Note: This recipe should last about a month in the fridge in an air tight bottle or jar. Just give it a good shake before each use.

Ingredients

  • 1 360mL can Nature’s Charm Evaporated Coconut Milk
  • 1 320g can Nature’s Charm Sweetened Condensed Coconut Milk
  • 1 2/3 cups Irish whiskey (check its vegan using Barnivore)
  • 1 teaspoon instant coffee granules
  • 1 1/2 tablespoons vegan chocolate sauce/topping
  • 1 teaspoon vanilla extract

Method

  1. Add all ingredients to a blender.
  2. Starting on a slow speed, gradually increase and blend for about 60 seconds.
  3. Pour into bottles and pop into the fridge to drink alone, with milk or my fave, over ice cream!
