Kentucky Fried Cauliflower

Well shit. I think I may have just made one of the best recipes I’ve ever made, fam! After a random convo with a friend about vegan fried chicken, I popped into the kitchen to have a go at making some with cauliflower. I wasn’t actually expecting it to turn out this bloody good, so had to grab the camera and take some shots to share with y’all!

The shape of cauliflower chunks lends itself perfectly to chicken pieces and I’ll be damned if I haven’t created the ultimate crispy coating for them too. Serve these bad boys with fries or mashed potato, peas and gravy.

Ingredients

  • 2 cups soy milk
  • 2 tablespoons apple cider vinegar
  • 1 cauliflower
  • 1 litre oil for frying
  • 2 cups plain flour
  • 3 tablespoons salt (plus extra for later)
  • 2 tablespoons garlic powder
  • 2 tablespoons onion powder
  • 3 tablespoons mixed dried herbs
  • 1 tablespoon paprika
  • 1 tablespoon white pepper
  • 3 teaspoons baking soda

Method

  1. In a small bowl, whisk together the soy milk and apple cider vinegar. Set aside.
  2. Cut the cauliflower into chunks (you don’t want too much stalk so look out for that) and set aside.
  3. Add the oil to a saucepan or deep fryer and bring to a medium-high heat.
  4. In another small bowl mix together the flour, salt, garlic powder, onion powder, dried herbs, paprika, pepper and baking soda.
  5. Coat each chunk of cauliflower in the soy milk mixture before coating completely in the flour mixture, gently tapping off the excess before carefully adding to the oil.
  6. Cook until deep, golden brown and drain on paper towel before adding extra salt and serving with your favourite sauce (might I suggest smoky bbq?)

This recipe is delicious despite the amount of salt. Do you mean tablespoons of salt or teaspoons?
