Unfortunately, summer is still here and with Valentine’s Day on the horizon, it’s time to start thinkin’ about sweet recipes to celebrate the day of looooove. My Strawberry Ice Cream is the perf V-Day treat and because it’s full of real strawberries, it’s basically fruit which means it’s basically good for you.
Ingredients
- 500g strawberries
- 1 teaspoon vanilla extract
- 1 cup non-dairy milk
- 300g silken tofu
- 320g condensed coconut milk
Method
- Chop the strawberries and chuck ’em in a food processor, along with the vanilla extract, non-dairy milk, silken tofu and condensed coconut milk.
- Blend until smooth and pour into your ice cream maker.
- Churn according to instructions and when done, pour into a freezer-proof container.
- Transfer to the freezer until firm.
- Serve immediately.
