Matcha + Coconut Glazed Donuts

It’s been a minute since I whipped up some doughies so when my pals at Nature’s Charm asked me to develop a recipe with their Coconut Matcha Sauce, Matcha Glazed Donuts were the first thing to spring to mind. It’s easy being green when these tasty babies are placed in front of you!

Ingredients

Donuts

  • 6 tablespoons warm water
  • 1 1/2 teaspoons dry yeast
  • 1/2 cup non-dairy milk
  • 1 teaspoon apple cider vinegar
  • 1 tablespoon vegetable or canola oil
  • 2 1/2 cups plain flour (plus extra for dusting)
  • 1 teaspoon salt
  • 4 tablespoons caster sugar
  • 1 teaspoon matcha powder
  • Canola or vegetable oil for frying

Glaze

  • 1 cup Nature’s Charm Coconut Matcha Sauce
  • 1 tablespoon Nature’s Charm Condensed Coconut Milk
  • 1/3 cup desiccated coconut

Method

  1. Put the warm water in a cup and sprinkle the yeast on top. Set aside to activate.
  2. Whisk together the non-dairy milk and apple cider vinegar and set aside to curdle.
  3. Sift the plain flour, salt and matcha powder together and add the caster sugar.
  4. Create a well in the dry ingredients and add the melted vegan margarine along with the yeast mixture and milk mixture.
  5. Using the dough hook attachment on your electric mixture, mix until a dough is formed.
  6. Tip out onto a lightly floured surface and knead for a couple of minutes before popping in a bowl lined with oil.
  7. Cover and set aside until the dough has doubled in size.
  8. Roll out the dough on a lightly floured surface until it’s about 2cm thick. Use a drinking cup or round cookie cutter to cut out 8 even round donuts.
  9. Place the doughnuts on a tray and cover. Allow to sit for an hour to double in size once again.
  10. Fill a saucepan halfway with canola or vegetable oil and place on medium-high heat.
  11. Once heated, carefully add 1-2 doughnuts at a time, cooking on once side until golden before gently flipping.
  12. When cooked on both sides, gently remove from the oil and allow to drain on paper towel.
  13. Repeat with the remaining doughnuts and then place on a cooling rack with paper towel underneath.
  14. To make the glaze, combine the Nature’s Charm Coconut Matcha Sauce and Nature’s Charm Condensed Coconut Milk in a small saucepan.
  15. Bring to the boil over medium high heat and allow to cool for 10 minutes.
  16. Carefully pour the glaze over the doughnuts and sprinkle with desiccated coconut.
  17. Allow to cool completely before serving.
