Difficulty: Easy

Serves 2-4 (depending on serving size)

I told y’all I wasn’t going to leave you hanging on the recipe-front while I continue on my low carb grind, so I’m hitting you with another recipe with my friends from Nature’s Charm.

This EASY AF chocolate pudding contains only 5 ingredients, takes minimal effort to make and the end result is also gluten free and nut free (as long as you’re not allergic to coconut, that is!) You couldn’t ask for a better recipe to rustle up for a last minute dinner party or after-dinner hankering if you tried.

Ingredients

  • 1/2 cup caster sugar
  • 3 tablespoons corn flour
  • Pinch of salt
  • 1 can Nature’s Charm Evaporated Coconut Milk
  • 80g vegan chocolate, melted

Method

  1. Chuck the caster sugar, corn flour and salt into a medium saucepan.
  2. Place the saucepan over medium heat and gradually whisk in the Nature’s Charm Evaporated Coconut Milk.
  3. Continue to whisk over medium heat until the mixture thickens (it’ll seem like nothing is happening and then BAM!)
  4. Remove from the heat and gently whisk in the melted chocolate.
  5. Pour into glasses or cups and allow to chill completely before serving (with a little extra chocolate or berries if you’re feelin’ fancy.)
