It’s been a minute since I’ve hit you with a LAV x Nature’s Charm collab but this super simple 6 Ingredient Caramel slice will make it up to you, I promise!

The caramel-ness comes from NC’s Coconut Caramel Sauce, while the creamth comes from their amazing Coconut Whipping Cream.

Ingredients

  • 2 sheets vegan shortcrust pastry, defrosted
  • 400g Nature’s Charm Coconut Caramel Sauce
  • 2 teaspoons agar agar powder
  • 400mL Nature’s Charm Coconut Whipping Cream, refrigerated overnight
  • 1 teaspoon vanilla extract
  • 1/2 cup icing sugar
  • Grated chocolate to serve (optional)

Method

  1. Preheat the oven to 180°C and grease a 36x13cm loose bottomed tart pan.
  2. Carefully line the tart pan with the shortcrust pastry, gently pressing into the grooves and leaving a little extra around the edges (the pastry will shrink as it cooks.)
  3. Cover the pastry with baking paper and fill with baking beans before placing the tart tin in the oven and bake for 20 minutes.
  4. Carefully remove the baking paper and baking beans before returning to the oven for a further 10 minutes.
  5. Next use a sharp knife to cut off the excess pastry and get a neat edge around the top of the tart.
  6. Pour the Nature’s Charm Coconut Caramel Sauce into a medium-sized saucepan over medium-high heat.
  7. When the caramel has thinned out, whisk in the agar agar and continue to whisk until boiling.
  8. Continue to boil the sauce until it deepens in colour and is super bubbly. Remove from the heat before carefully pouring into the tart pan and placing in the fridge to cool completely.
  9. Now, empty the contents of the Nature’s Charm Coconut Whipping Cream into the bowl of your electric mixer.
  10. Add the vanilla extract and sift in the icing sugar before switching on the electric mixer. Mix until light and fluffy.
  11. Once whipped, remove the rest of the tart from the fridge and top with the Coconut Whipping Cream (you can spread it or pipe it on!)
  12. Finish with some shaved chocolate (optional) and keep in the fridge until you’re ready to serve.
