Rocky Road Cookies

Yeah yeah, it’s been a minute since I last posted here and I’m sure you’ve been missing me A. LOT. To be honest, I just haven’t really felt like developing recipes or shooting or writing. That’s the beauty of Like A Vegan not being a major source of income for me; I can just blog when I feel like it and don’t resent doing anything because I have to.

Anyway, today I felt like it so I decided to get myself into the kitchen to whip up some Rocky Road Cookies! These chocolatey circles are filled with crushed nuts, chocolate chips and gooey marshmallow but like regular rocky road, you could add anything you like into them (except maybe broccoli, that would suck!)

Ingredients

  • 3/4 cup vegan butter/margarine
  • 1/2 cup tightly packed brown sugar
  • 1/2 cup caster sugar
  • 1 teaspoon vanilla extract
  • 2 tablespoons soy milk (or any non-dairy milk)
  • 2 cups plain flour
  • 3 teaspoons baking powder
  • 1 teaspoon salt
  • 1/4 cup cocoa
  • 1/2 cup granulated nuts
  • 1/2 cup vegan choc chips (or chopped up chocolate if you can’t get chips)
  • 1/2 vegan marshmallows, chopped

Method

  1. Line 2 baking trays with baking paper and preheat your oven to 180°C.
  2. In a large bowl, cream together the butter/margarine with the brown and caster sugar until fluffy.
  3. Mix through the vanilla extract and soy milk before sifting in the flour, baking powder, salt and cocoa. Continue to mix until a dough is formed.
  4. Next, fold through your granulated nuts and choc chips until they’re well distributed.
  5. Using a spring-loaded ice cream scoop as a measure, scoop out the dough and roll into a ball, adding a couple of chunks of marshmallow.
  6. Place each ball on the tray, evenly spaced across the two baking trays. Using a cleaning drinking glass, gently press down on each ball to flatten the top and if you’ve got ’em, add a couple of extra choc chips!
  7. Pop the trays in the oven and bake for 15-20 minutes before removing to cool completely.
  8. Once cool, eat every single one or, if you have self-control, store them in an air-tight container.

I’m feeling munchy and came across this recipe and would love to make it. But I have a quick question? where do you get your vegan marshmallows from?

Oh yes! I found the Dandies Marshmallows at my local vegan store (which I didn’t know existed until now 🤭)
