No Bake Mocha Tart

AD – I’ve teamed up with my pals at Nature’s Charm to create a delish dessert using their products.

You all know how much I love my Nature’s Charm products, they make creating in the kitchen so much more convenient and delicious! This time around we’re going to sweeten things up with my No Bake Mocha Tart using three products: Evaporated Coconut Milk, Sweetened Condensed Coconut Milk and the Coconut Whipping Cream!

This would be the perf recipe to take along to any holiday parties you’ve got coming up; not only is it easy to pull together and taste delicious but you don’t have to fire up the oven, making it perfect for warmer weather!

Ingredients

  • 20 Digestive biscuits (or similar)
  • 4 tablespoons cocoa
  • 2/3 cup vegan butter, melted (plus extra for greasing the tin)
  • 1 can Nature’s Charm Sweetened Condensed Coconut Milk
  • 1 can Nature’s Charm Evaporated Coconut Milk
  • 1/2 cup cold brew
  • 200g extra dark chocolate, cut into small pieces
  • 3 tablespoons corn flour
  • 1 can Nature’s Charm Coconut Whipping Cream, chilled overnight
  • 1 teaspoon vanilla extract
  • Vegan chocolate chips (optional)

Method

  1. Grease a standard, loose bottom tart pan with vegan butter.
  2. In a food processor, combine the Digestive biscuits, 2 tablespoons of cocoa and blend until a fine crumb is formed.
  3. Pour in the vegan butter and pulse until combined.
  4. Press the mixture into the tart pan and up around the edges. Set aside.
  5. In a medium-sized saucepan, combine the Nature’s Charm Sweetened Condensed Coconut Milk and Evaporated Coconut Milk with the cold brew and dark chocolate.
  6. Whisk over a medium-high heat until the chocolate has melted.
  7. Add the cornflour and continue to whisk until the mixture starts to thicken.
  8. Once thick and glossy, pour the mixture into the tart pan, smooth on top and place in the fridge to set.
  9. Whip the Nature’s Charm Coconut Whipping Cream in a stand or hand mixer with the vanilla until peaks are formed.
  10. Dust the top of the tart with a layer of cocoa.
  11. Carefully pipe some of the cream around the outer edge of the tart.
  12. Sprinkle the chocolate chips on top of the piped cream and serve.
