Time flies when you and everyone you know are having the worst year in memory, amirite?! For the most part 2016 has been a pretty big write-off IMHO but that doesn’t mean there haven’t been some truly excellent moments. I went on two overseas trips, completely redesigned the website and had my stuff shared in some hella cool places. Plus I made some delicious eats and discovered some dope vegan products so it ain’t all bad. Let’s try and focus on the positives and end the year on a good note, shall we?

My Basil Seed, Rose + Elderflower Cooler recipe even made it to the Vogue Paris website, which I think is a pretty fantastic achievement TBH. Spicy Jackfruit Tacos w/ Lime Slaw

Another pretty popular recipe that has even converted some of my meat-eating pals to the wonders of the humble and unsuspecting jackfruit! Such a quick and easy recipe to whip up and oh so simple to adapt to suit your needs – why not chuck the filling in a hard shell taco or pop it in a salad?

You guys went nuts for these doughy babies! Bite-sized, rolled in sugar and filled with hot jam, these guys are a real crowd pleaser. Other than the taste, the best thing about this recipe is that it’s so easy to do – no need to be an expert baker (lawd knows I ain’t!)

If you ask me (and you haven’t but this is my blog so I’ll say what I want), you absolutely cannot go wrong with anything that is filled with cream cheese and crumbed. You just can’t. I assume you agree and that’s why my Baked Jalapeño Poppers were such a hit!

IDC if you guys got sick of me banging on about my Creamy Mushroom Tagliatelle this year because it. is. LIT. So easy to make GF with the right pasta and it tastes mothereffing amazing, so much so that if you haven’t already made it, it may just save your 2106. Maybe.

I know it’s unusual but TBH breakfast foods really aren’t my jam so when I do breakfast I go hard. You guys seem to dig it when I do too because you went HAM for my Apple Pie Granola recipe – pictured here as a parfait layered with custard. That’s not super breakfasty I guess but hey, I’m a rebel.

If there’s something we can all agree on, it’s that we need those awesome weeknight meals that look like we put heaps of effort into but we didn’t really at all. Enter my Tofish Fingers! Keep some potatoes or oven fries on hand and a little tartare and you’ve got a winner right there.

As much as I love the vegan junk foods (don’t lie, you do too), it’s nice to freshen things up every once in a while. The best way to do that is with my Rice Paper Rolls and I love ’em because they make such a visual impact that’s perfect for taking along to summer picnics or parties.

This has to be one of my most-shared recipes of 2016 cos I got tagged in so many of your photos! Not only do these babies look freaking tasty but they taste freaking tasty too, which is kind of the point right? They’re pretty versatile too, you don’t have to use blueberries if you don’t like em – I reckon raspberries would go down a real treat!
